Green Tomato Chutney – with a kick !
- 6oz light brown sugar – heat the sugar in a frying pan until the sugar melts and caramelises.
- Then add 5fl oz white wine vinegar, 1 shallot and 1 garlic clove, finely chopped, 4oz sultanas and about 1 ½ lb green tomatoes, quartered.
- Then for the ‘kick’, add a small piece freshly peeled grated root ginger (about ¾ inch) and 1 finely chopped red chilli.
- Bring the mixture to the boil then reduce the heat and simmer for 1 hour, or until the chutney has thickened. (Draw a wooden spoon across the chutney. If it leaves a channel, then it’s ready).
- Spoon the chutney into sterilised jars.
- Enjoy !
Easy German Apple cake
- There are two types of topping to this Easy German Apple cake, choose your favourite. [Topping 1] 12oz sliced apple (can be lightly stewed), 2oz dried fruit or mincemeat, 1tabs chopped nuts, 1/2 tsp mixed spice or cinnamon; [Topping 2] 2oz plain flour, 1oz margarine, 1tbls brown sugar.
- Gently melt 4 oz margarine and leave to cool slightly.
- Stir in 3oz granulated sugar, 8oz self raising flour, 1 large egg, plus a bit of milk if needed to get a soft dropping consistency.
- Transfer 3/4 of the mixture to a lightly greased 7” round cake tin or similar and spread fruit over the top.
- Mix the remaining cake mixture with your chosen topping ingredients and sprinkle over the fruit and cake mix.
- Bake at 350’ (Gas Mark 4) for 50-60min, cool in the tin for 10mins then serve warm as a cake or pudding.
