PAN FRIED PORK LOIN CHOPS
Serves 4 Ingredients
4 boneless pork loin chops weighing about 150g each 2 tsp. butter salt and pepper to season
Method Heat a non-stick frying pan with the butter over a medium heat. Season the pork chops with salt and pepper on both sides. When the butter is bubbling turn the heat up slightly and add the pork. Leave the pork chops in place, do not be tempted to move them about. Allow the pork to cook for about 4 minutes on one side. Turn the pork over and cook for a further 4 minutes. When the pork is cooked it will have a firm springy touch when gently pushed with your finger. Take the pork out of the pan and pour over any juices. Cover with foil and rest for 5 minutes. Serve as you wish. Note: To make a little sauce to go with the pork, remove the pork loins from the pan, add about 100ml of stock or water to the pan and scrape all the sediment off with a wooden spoon.
